Banana Walnut Cake

This is one of my favorites. A good combination of Cake and bread.  You can enjoy this cake with a cup of coffee/tea or have it with fresh fruits and whipped cream. It contains very less sugar and has no butter & eggs. So no worries about the calories. 

Banana Walnut Cake
Prep. Time : 10 mins
Cooking Time: 45 mins

Ingredients
1 cup Whole Wheat Flour
1 cup All purpose Flour
2 very ripe bananas
1 cup granulated Sugar
1 cup Walnuts chopped 
1 Tbsp Oil  
2 Tbsp of Yogurt
1 teaspoon baking powder
1/2 tsp baking soda
1 tsp Vanilla Essence
pinch of Salt
1 tsp Cinnamon

For Dressing 
Confectioner's Sugar
Cinnamon

Optional
Few Raisins
1/2 tsp Cardamon powder

Preheat the oven to 180 C or 350 F.

In a medium size bowl sift all dry ingredients (flour, baking powder, baking soda, salt), stir together to combine. In another bowl, combine (with hands or using a hand mixer) mashed bananas, Sugar, Oil and yogurt. Add half of the dry ingredients into the wet ingredients, mix until the flour is just mixed in, then add in the remaining flour, 3/4th cup walnuts, raisins, vanilla Essence, cinnamon. Mix well until everything is combined.

Pour the batter into a greased loaf pan. Top the batter with the remaining chopped walnuts. Bake the for around 40 to 45 minutes or until a toothpick inserted near the center comes out clean. Remove from the oven and dress it by sprinkling cinnamon and powdered sugar mixture.

Now comes the hardest part. Allow the cake to cool for 10 to 15 minutes, before you start enjoying this irresistible cake. 

You can make this cake vegan by replacing Yogurt with oil.
